Buckwheat, a pseudo cereal, is a three sided seed of a flowering rhubarb plant and not from a grass ..probably one of the world’s oldest domesticated crops probably originating in Central Asia .
We have heard of Buckwheat pancakes and the world famous Soba Noodles (No wonder Japan imports most of the buckwheat grown in the US) . In Eastern Europe its mixed in milk to make a drink called Kasha . The surge in consumption happened in the 1970’s.
A few Buckwheat facts :
This flour is gluten free, source of all four vitamin B ‘s, vitamin K, riboflavin, thiamine ,dietary fibre, minerals such as magnesium, manganese ,niacin and phosphorus .
Rich in carbohydrates and protein.
Next time you check into a hotel ask for a buckwheat pillow as hulls of the seed are used as pillow fillers too providing excellent support for the spine and neck and allow air to move freely within preventing heat buildup.
An acre of buckwheat grown can support a colony of bees producing up to 150 pounds of honey!
It may lower blood sugar and keep the heart healthy
It can help to manage diabetes

I got the buckwheat flour from Aswini ‘s Rootz Organics or www.rootzorganics in Dubai . Do get yours from a known source . Its also known as "kuttu" in Hindi .
The cookie is delicious …and one would think contains cocoa too… take a bite and you may not just stop at one.
125 gms unsalted butter , softened
100 gms jaggery powder , organic
1 no. egg
150 gms buckwheat flour
100 gms, chopped hazelnuts or sliced almonds -optional
To prepare :
Preheat the oven to 180 deg c and line a baking sheet with paper
Cream together the butter and jaggery followed by the egg.
Mix the flour and baking powder and if you are using nuts .If you find the mixture dry then you may add a teaspoon of cold water.
Take a heaped teaspoonful of the mixture , roll into balls and place on the baking sheet . Gently press with the fork to flatten the dough balls slightly .
Bake for 15-20 minutes and let them cool on a rack once done .
