A dollop of goodness ...on Christmas Eve

Ah! Christmas ... it’s surely cookie time !
Trying out different flours and grains is good for your health . This adds to your nutrient quotient and another jar on your kitchen shelf ! This time its Vegan and gluten free Coconut scented almond flour cookies .
This cookie is very easy and can be made in minutes .
Ingredients : Makes: 18
2 cups Almond flour
5 tbsp Jaggery powder
4 tbsp Coconut oil
1 tbsp water
1/4 tbsp Vanilla extract
1/4 tbsp Sea salt
Sesame seeds for garnish
To prepare :
1. Preheat oven to 175 C. Line a baking sheet with parchment paper. 2. In a medium sized bowl, combine all of the ingredients, and make sure to break up any lumps in the flour and/or jaggery.
3. After it has been well mixed,shape the dough into around 2.5 cm balls. Space balls 2 inches apart on prepared baking sheet.
4. Flatten the cookies with a fork and sprinkle some sesame seeds .
5. Bake in the preheated oven for 10 to 12 minutes until golden (the cookies will seem somewhat soft while hot; they will firm up as they cool).
6.Remove from oven and cool for 10 minutes. Let it cool completely before serving .
