All is well....when there is a Kathi Roll

Kathi Rolls or wraps always remind me of my mother. If she was treated to a kathi roll , all was well

We usually had a chicken or Paneer (Cottage cheese)double egg Kathi roll at the famous Nizams Kathi, but today , keeping in view with light lunches I prepared a vegetable roll. You can omit the Egg on the Jowar wrap if you don’t have egg. But it does give it a lot of added flavor. I have used Jowar or Sorghum Millet as the wrap as it is gluten free and packed with nutrients . Thanks to the Millet table , the jowar wraps were a hit !

Mixed Vegetable Jowar (Sorghum)and Egg Kathi Rolls.... You cannot eat just one !

Ingredients

For the Filling :

1 ½ cup of chopped carrot, beans , cauliflower or any vegetable of your choice; steamed,

¼ cup red and green peppers

1 medium sized boiled potato , cubed

1 tblsp ghee or oil

½ tsp ajwain or carom seeds

½ tsp cumin seeds

1 no. medium onion, finely chopped

1 tsp freshly crushed ginger and garlic

½ cup tomatoes, chopped

¼ tSp turmeric powder

½ tsp coriander power

¼ tsp garam masala powder

¼ tsp Kashmiri red chili powder

Salt

½ bunch of coriander leaves, finely chopped

Added filling

½ no. onion, finely sliced

1 ½ tsp lemon juice

½ tsp chaat masala

¼ tsp red chili powder

To prepare:

  1. Heat oil in a pan , add the carom seeds and cumin seeds when hot .

  2. When they start spluttering , add the onions and saute till they turn translucent.

  3. Add the crushed ginger and garlic and sauté till the raw aroma reduces.

  4. Add the tomatoes and cook till done.

  5. Add the spice powders and mix well.

  6. Add the peppers and cook. Then add the potatoes.

  7. Mix very well and add the vegetables. Season.

  8. Add the coriander and mix.

  9. For the Added filling : Mix all the ingredients and keep separately in a bowl.

For the Jowar or Sorghum wraps

Ingredients

1 cup Jowar flour

½ tsp salt

1tsp oil

1 cup water

1 Egg, beaten

  1. In a pressure cooker, add the water , salt and oil. Cook it for 1 whistle.

  2. Release the pressure and open the lid. Add the jowar flour and mix very well.

  3. Close the lid again and put the weight. Keep for 15 minutes.

  4. Take out the dough, knead it a bit and make round balls.

  5. Dust some flour and roll into rotis .

  6. Heat a griddle or tawa , place the rolled dough on it and cook till done.

  7. In a pan , heat some oil and smear some beaten egg on one side of each wrap and cook that side . Keep aside.

You can make them imperfectly round or perfect using a bowl to cut into shape

To prepare the wraps :

  1. Take a wrap and place a bit of filling onto it , add the marinated sliced onions and if you have some mint chutney you may smear it in the wraps. Alternatively you may serve on the side.

  2. Close the wrap with a toothpick and wrap it with wax paper for a to go meal or simply serve with your choice of accompaniment like a daal , raita or even potato wedges.

  3. If you want Chicken kathi rolls, you can view the recipe of tandoori chicken on my blog and add that to the roll . For paneer, you may add it, crushed or small cubes to the vegetable filling .
