Day 10 Makhana Kheer or Creamy Foxnut Pudding to celebrate the completion of a full Navratri fastin

It is considered one of the most auspicious fasting cycles this year and has come after 16 years. The reason , the first day of navratri overlapped two days and so it gives us a chance to offer our prayers to the goddesses for one more day!

As we prepare for Vijay Dashimi(or the victory of good over evil) , that is Dusshera , I conclude this fasting cycle with one of my favorite ingredients -Foxnuts , this time in a sweet dish , Kheer It delicious and very creamy owing its texture to the makhanas that are roasted and ground in it.

To prepare Phool Makhana or Foxnut Kheer:

Take 1 cup of Phool Makhanas or foxnuts . Heat 2 tsps of ghee and roast these with 10-12 cashews(I used cashews instead of blanched almonds that you can add at the end) . Keep aside.

Take 2/3 of the roasted Makhana or foxnuts and grind them to a powder form.

Take a pan and heat 2 cups of milk . As it boils add the powdered Makhana and keep stirring .

Add a pinch of cardamom powder and saffron .

Put on simmer and let it cook for at least 10 minutes. The Makhanas should be very soft.You will see it becoming thicker in consistency and then add the cashews and 2 tblsp of golden raisins.

Always scrape the evaporated milk from the sides of the pan and mix it back in the kheer.

Heat well and take off flame.

Serve this delicious kheer hot or cold.

With this , we bring in the auspicious day of Dusshera which starts tonight at 22:53 hrs tonight.
